- You need 5 of eggs.

- It’s 2 1/4 teaspoon of baking powder.

Ricotta Pie instructions
- Use Premade crust or make crust with the following directions.
- Sift flour, sugar, baking powder, and salt.
- Cut in butter and blend until it resembles coarse crumbs.
- Mix 3 eggs with water.
- Add to dry ingredients and form a dough.
- Wrap in plastic and chill until firm.
- Divide dough into four portions.
- Roll dough into two 1/8 inch thick circles.
- Place into two 9 inch pie plates.
- Roll remaining portions to 1/8 inch rounds and cut into 1/2 inch strips for lattice OR use cookie cutters to decorate top of pie.
- Filling:.
- Beat ricotta, lemon zest, vanilla, and sugar until smooth.
- Add eggs — one at a time — beating after each addition.
- Pour into crust.
- Make lattice or place top shell on top of filling.
- Carefully Crimp Edges.
