  7. Prepare of optional: 4 cups arugula or spinach (I just happened to have arugula that needed to get used up).
  8. Make ready 6 cups of unsalted liquid (water or broth of choice).
  9. You need 1/2 Tablespoon of salt.
  10. Make ready 1 pound of sausage, cut into bite sized pieces.
  11. Take 4 of tomatoes, chopped or one 15 oz. can diced tomatoes (I just happened to have fresh ones that were starting to get wrinkly…).
  12. Prepare 1 of bay leaf.
  13. Prepare 1 teaspoon of oregano.
  14. Take 1/2 teaspoon of pepper.
  15. Take 2 cups of leftover mashed potatoes.

  1. In a 4 to 5 quart pot, bring 1/2 Tablespoon oil up to medium heat and sweat onions, carrots, celery, and garlic until onions start to turn translucent. (About 3 minutes or so.).
  2. Add kale, arugula, liquid, salt, and cook, covered, for 15 minutes, stirring occasionally..
