  1. Make ready 2 cup of saltfish (salted cod).
  2. Make ready 3/4 cup of all-purpose flour (more or less).
  3. Prepare 1/2 cup of water.
  4. You need 1 can of ackee (if you want just saltfish fritters just omit this).
  5. You need 1 1/4 tsp of dried thyme.
  6. It’s 2 of Green onions, chopped.
  7. Take 1 tsp of baking powder.
  8. It’s 1/4 of Scotch bonnet pepper,minced (more if you like it spicy).
  9. You need 1 of egg.
  10. Prepare of salt and pepper (if you removed to much of the salt from the fish).
  11. Prepare 2 cup of oil for frying.
  12. You need 2 of garlic cloves,minced.

Adjust the spices to suit your taste; it should be quite (CAUTION: hot oil can be dangerous.Do not leave the pan unattended.)
