  1. You need 2 of boneless, skinless chicken breasts (cooked & shredded).
  2. Take 1 tbsp of oil.
  3. Take 2 can of (10 oz) green chile sauce.
  4. It’s 1 can of (4 oz) diced green chiles.
  5. You need 1/4 tsp of salt.
  6. Take 1/2 tsp of pepper.
  7. Take 1/2 tsp of cumin.
  8. It’s 1 tsp of garlic powder.
  9. It’s 1 tsp of onion powder.
  10. Prepare 1/2 tsp of oregano.
  11. It’s 1 of (8 oz) block Monterey Jack (shredded) 6-8 flour tortillas (approx 7" diameter).

  1. Preheat oven to 350.
  2. In large skillet, heat oil on medium heat. Add chicken, seasonings, chiles and 1/2 of a can of chile sauce. Stir..
  3. Once mixture is warm, stir in 1/2 of the cheese.
  4. Lightly grease a 9x13 baking dish & spread 1/2 can of chile sauce on bottom of pan.
  5. Place large spoonfuls of chicken mixture in tortillas, roll and place in baking dish seam side down.
  6. Pour remaining sauce (1 can) over tortillas.
  7. Cover enchiladas with remaining cheese.
  8. Bake for 15-20 minutes.
