Make ready 1 of red onion diced.
You need 2 can of spinach drained well.
You need 2 tbsp of chopped garlic.
Make ready 4 oz of cream cheese.
Prepare 1 of jalapeno diced fine ( can chop up canned jalepeno ).
You need 10 of flour taco/fajita shells.
Make ready 4 cup of mexi shredded cheese.
Make ready 1 of large can of enchilata sauce.
It’s 1 tbsp of veg oil.
Cheesey Spinach Enchilada s instructions
Saute onion in veg oil.
When cooked add spinach & garlic.
Mix well, add cream cheese and jalepeno, mix untill well combined.
Set aside to cool.
Add spinach mixture with a hand full of cheese, roll up , put seam side down in a sprayed large baking dish.
Pour sauce and the rest of the cheese over the enchiladas..
