Add peas to a pan of boiling water, bring back to the boil, simmer for 1min,drain and refresh in bowl of cold water.Drain again,then set aside 2tbsp of the peas.Blitz the rest in food-processor with onion,half the avocado,mint,lemon juice and olive oil to make a purée.after add the remaining avocado,mix to combine,then season to taste with salt and pepper, add more lemon juice if need be..
