Veggie (or Quinoa) Rice Recipe. Quinoa Veggie "Fried Rice" - Quinoa is a wonderful substitute in this protein-packed veggie "fried rice"! Quinoa is one of my favorite ingredients ever.

You can cook Veggie (or Quinoa) Rice using 11 ingredients and 5 steps. Here is how you achieve that.

Ingredients of Veggie (or Quinoa) Rice

  1. Take 1 1/4 cup of uncooked white rice (or Quinoa).
  2. It’s 1 3/4 cup of water.
  3. Make ready 1/2 cup of chopped onion.
  4. It’s 1/2 cup of chopped green bell pepper.
  5. Prepare 1 cup of zucchini squash, peeled and diced.
  6. It’s 1 cup of chopped mushrooms.
  7. Prepare 1 tbsp of minced garlic.
  8. You need 2 tbsp of olive oil.
  9. You need 1/2 cup of grated parmesan cheese.
  10. It’s 1 tsp of oregano (or italian seasoning mix).
  11. Prepare 1 of salt & pepper to taste.

Meanwhile, I chopped and sauteed my veggies and garlic, and got things rolling.Then finally added in the chilled quinoa and the remainder of the ingredients, sauteed in lots of butter over.Add quinoa and veggies and cook until starting to soften and coated in.Keep in mind that some brands may become cross-contaminated with other grains such as wheat during processing.

Veggie (or Quinoa) Rice instructions

  1. Saute veggies in olive oil till soft. (I used the insides of the zucchini for stuffed zucchini boats.)

  1. Add in garlic, rice or Quinoa and oregano, saute 1 minute more.

  1. Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed..
  2. Stir in Parmesan cheese and extra seasoning if desired serve..
  3. Enjoy as a main dish or side with fish, Pork chops, steak or chicken!
